BLT, yes! SST, what?
I crave BLTs when summer tomatoes come in.
This weekend, though, I had the requisite tomatoes right off the vine, but no bacon.
And to add insult to injury, as it were, I had no lettuce.
So what did I do?
I improvised.
I had some fresh local sausage I picked up from Tommy Dunning at the Dixie Classic farmers market.
I also had some baby spinach, bread, and plenty of mayo.
So I ended up with an SST, a sausage, spinach and tomato sandwich on toast, slathered with mayonnaise.
Pretty darn good, if I do say so myself,.
I’m now thinking of other twists on the old BLT. The avocado on my counter is foremost in my mind.
But if anybody else has any other suggestions, I’d love to hear them.

ALTO. Anchovy, lettuce, tomato and add a few pitted Greek olives also Not for everyone for sure but between 2 pieces of crusty bread it’s good to me.

I’m usually at a loss for bacon too…so I fry salami.
Also while trying to extend a last bit of pesto I made a quick Pesto Vinaigrette and drizzled it over the ‘SLT’ which made it pretty darn delicious!

The NY Times suggested plums instead of tomatoes in a recent story - pity the Northeasterners, and their tomato blight woes this summer.

Yesterday we had Basil, Bacon, and Tomato sandwiches because we were out of lettuce as well but had plenty of fresh basil from the garden. With a slide or two of cheese thrown in it was really good.
