Fair Update

In case you haven’t gotten enough winning recipes from the Dixie Classic Fair, I can tell you that I’ll have more—including chicken soup and cookies—on Oct. 14.

For those who can’t wait, here are a couple of other winners.

Tex-Mex SPAM Lasagna
Recipe by Amy Linville of Pfafftown, 1st Place in the SPAM contest, 2009 Dixie Classic Fair
1 can SPAM Classic, diced
2 (10-ounce) cans diced tomatoes, drained
1 Tbsp cumin
¼ cup salsa of choice
2 (15-ounce) cans black beans
2 (15-ounce) cans whole corn
1 cup diced peppers of choice
4 cups Mexi Blend shredded cheese
6 (6-inch) corn tortillas
1 (16-ounce) container sour cream

Preheat oven to 350 degrees. Brown diced SPAM in a large pan over medium-high heat. Reduce heat to medium; add tomatoes, cumin, salsa, beans, corn and diced peppers. Bring to a boil; simmer 10 minutes. In a 9-by-13-inch pan, layer this mixture with cheese then tortillas and repeat. Bake 30 minutes and top with sour cream.

 

 


Fresh Veggie Cups
Recipe by Robin Lowder of Winston-Salem, 1st Place in the Hidden Valley Ranch “Fresh Taste for the Family” contest, 2009 Dixie Classic Fair

8 ounces cream cheese, softened
2/3 cup mayonnaise
1 (1-ounce) package Hidden Valley Ranch Dressing Mix
1 cup diced tomato
2/3 cup finely chopped onion
1/3 cup finely chopped green pepper
1/3 cup finely chopped red pepper
½ cup chopped white button mushrooms
¼ cup grated carrot
5 slices cooked bacon, chopped
2 tsp chopped fresh parsley
1/3 cup grated parmesan cheese
½ cup grated sharp cheddar cheese
1 can refrigerated biscuits (8 count/flaky style)
2 (12-inch) muffin capacity tins

Preheat oven to 450 degrees . In a medium bowl, mix together the softened cream cheese, mayonnaise, and ranch dressing mix, blending well. Add remaining ingredients except biscuits and mix well. Open the biscuits and separate each one into thirds. Place each third into a cup in the muffin tins (ungreased). Fill each cup with two heaping tablespoons full of the veggie filling. Place in oven and bake 8 to 10 minutes or until golden brown.
Makes 24 veggie cups.
