Pesto Plus

In my July 16 story on making pesto, the main photo (left) and recipe talk about a dish of pasta and pesto and nothing else.

I love to eat it this way. Clearly, though, any cook can make a few additions to make this a more substantial meal.

Pesto does not go so well with beef or pork.

It’s OK with chicken.

It shines with fish (despite traditional taboos about serving fish with cheese).

But it’s really stellar with seafood.

I’m partial to shrimp with pesto. Clams and mussels would be great, too.

Try sautéing shrimp with some butter, garlic and halved cherry tomatoes and tossing that with pesto-coated pasta.

Now that’s good eating.
