Contrary to a popular stereotype, vegetarians are not all champions of self-denial, pathetically munching a sprout on the sidelines while watching the omnivores have all the culinary fun. Instead, the vegetarians we know love good food and know where to get it. They aren't about to settle for a bland meal, either at home or at a restaurant.

That sounds good, and VERY easy!

As I have confessed in prior posts, I am not much of a kitchen gal and frozen foods are my mainstay. However, you two are inspiring me to at least look up vegan recipes.

Here’s one I found that’s quick and easy:

5 ounces firm tofu, chopped into bite-size pieces
1 tablespoon peanut butter (creamy or crunchy - your preference)
1 tablespoon soy sauce

1. Place chopped tofu, soy sauce and peanut butter in a small sauce pan.
2. Add enough water to just cover the tofu.
3. Simmer over low heat until the sauce thickens.
4. Serve hot with steamed rice.
